You are correct in that we need to keep track of the ray's x,y,z dimensions alongside the theta and phi, but we can drop the z because it is redundant information when using cameras due to the fact that a ray's radiance is constant throughout its path (if nothing is blocking it) [wikipedia on the redundancy]
