What is T?

T is the period of the cosine function. We have T = 1/f, where f is the frequency.

yes, exactly! For periodic functions like sin and cos, T is the time period of the function, after which it starts repeating.

You can see that in the bottom row, T=1/2T=1/2, which is indeed how long it takes before the signal begins repeating itself.
