High-degree Bernstein polynomials don't interpolate well because of Runge's phenomenon. This refers to the oscillations or "wiggles" that can occur when using high-degree polynomial interpolation to approximate a function, particularly when evenly spaced interpolation points are used. For example, as the degree of the polynomial increases, the oscillations between the interpolation points become more pronounced.
