Although regularizing the size of triangles might be better for consistency, doing so in this case gets rid of a lot of the detailing (like on the cow's eyes and nostrils). I think there's an important tradeoff between regularization and accurately representing the original image.

I agree that some of the details are lost with the regularization but I think one of tradeoff would be to regularize only the larger triangles. This could preserve the details of the smaller triangles but also reduce the range of the area of the triangles in the mesh.
