If we simply push the image plane back, wouldn't everything be out of focus and look blurry? How does it make sure a different object in the scene is in focus?

I had the same question! My hunch is that it might be most focused at the middle? Maybe you can move up the plane to center different parts.

To answer the questions above, I think the idea is that we aren't exactly pushing the image plane back, it's that we're simulating moving the sensor plane back to match AN image plane that corresponds to a particular desired focus plane.
