Why don't we use an ideal low-pass filter here? Is it because using a box filter convolution in the spatial domain is easier than trying to approximate an ideal low pass filter, and convolving that in the spatial domain?

Yes, I think that realizing the spatial domain representation of an ideal low pass filter is not possible - it requires you to have infinite memory, making convolution impossible.
