How are colors outside of the gamut dealt with? Do we just estimate the closest colors we can display?

I'm not sure if there's a more technical solution, but it looks like a manual adjustment you can do to approximate colors outside of the CMYK gamut for printing is to adjust the brightness, hue, and saturation. A couple of explanations for how to target out of gamut colors in Photoshop can be found here and here.
