Does the iPhone use sRGB as the standard? Any example how other companies choose to use different representation?

I believe iPhone supports sRGB but also has a wider color gamut.

According to Apple's Human Interface Guidelines on color, the iOS developer can specify which color space they'd like to use, sRGB being the standard. They can specify DCI-P3 (Apple calls it Wide Color) if desired, and the user's device will dynamically switch to the new space if supported (I believe the earliest device with P3 support is the iPhone 7).

On Android, it looks like you're able to choose which color space you want to use. This link, although a bit dated being from 2017, gives a brief overview of smartphone color offerings.

I thought Apple's displays are manufactured by Samsung. How come the color gamut on those two devices differs that much? Software?

I believe Apple's main display manufacturers are LG and Japan Display.
