Why are the horizontal gradients vertical lines but the vertical gradients horizontal lines?

That is because horizontal gradients capture changes in frequency along the X-axis (which itself is horizontal). The same applies to vertical gradients and the Y-axis. Still, this might be a bit of a misnomer since even experts can get confused.
