Clothing and hair simulation are some of the most intensive but impressive things to model out there, especially for real-time applications like games! Of course, Nvidia has done work on this with one of the more interesting examples being in Witcher 3 (https://developer.nvidia.com/hairworks).

Another cool application, which is actually inspired by one of my friends, is to simulate the dynamics and movements of clouds. We don't usually think of clouds as interactive objects, especially when they're only included in the picture as part of the background, but if we are to simulate, for example, a plane flying across a cloud, we would need techniques to mimic the physical properties of them, e.g. water particles and lightings, etc.
