So my guess is diffusive reflection causes materials to be more matte and uniform-looking?

Yes, ideal diffuse reflection causes surface to appear equally bright in all directions (because light is scattered equally in all directions), which produces a matte/chalky texture.

To add on previous comments, specular reflection/shading adds more metallic gloss or glass-like effects to the materials on the contrary.
