The course doesn't seem to go into much detail (at least through the rasterization section) of how the mapping to texture coordinates are generated (although maybe that will be covered in the geometry section).

yeah this class doesn't go too much in detail about it. CS194-26 might be of interest, as it seems to go a bit more in depth about the idea than this class (based on my experience so far while currently taking the class)
